Ingredients:

1 cucumber, peeled and cut into 5mm dice

1 shallot, finely chopped

½ fennel bulb, tough outer layer removed, finely chopped

A small bunch of mint, leaves picked and finely sliced

1 large green chilli, deseeded and finely chopped

3 tbsp fish sauce

3 tbsp Verjus

Method:

Mix all the ingredients together in a bowl, adding 3 tbsp water. Serve with fried seafood.
