600g fresh strawberries (hulled)

200g caster sugar

75ml verjus

6 fresh mint leaves

6 fresh basil leaves


To finish

fresh mint and basil sprigs

250g clotted cream


Method:  Halve the strawberries and place in a large bowl. In another bowl whisk the sugar and the vejus together to dissolve the sugar. Tear the basil and mint leaves and mix with the wine. Pour the marinade over the strawberries and toss together. Leave the strawberries to marinade for 2 – 3 hours in a cool place, gently mixing them once or twice while marinating.


To serve: Place the strawberries in a fresh clean bowl and drizzle over the marinade. Finish with some mint and basil sprigs. Serve with a dollop of clotted cream.
